Asian Inspired Carrot Fritters

These crispy carrot fritters are a delicious way to use up all those forgotten or sad looking veggies. Are a great way of reducing food waste, easy to make and require just a few simple ingredients. You will find that they are very versatile and can be enjoyed as a snack, light lunch, or as a side dish. Pair them with the quick dipping sauce or enjoy them plain.
And, why not get creative by using any other seasonal vegetables?
Kitchen tools needed: mandolina or a grater
Serves: 4 as a side

Difficulty: Easy
Ingredients:
- 400 g carrots thinly grated – I had leftover rainbow carrots, but can use any preferred kind
- 40 g coriander – finely chopped
- 3 green onions - finely chopped
- 1 tbsp ginger – grated
- 1 large egg – beaten
- 150 g flour
- Salt and pepper
- ¼ tsp of preferred Asian spice
- 1 lt Vegetable oil for frying
For the dipping sauce
- 1tbsp light soy sauce
- 2 tbsp rice wine vinegar
- 2 tsp maple syrup
- 1 tbsp grated ginger
Method:
- Place all ingredients into a bowl and combine.
- With the help of a tablespoon create same size fritter and place them on a tray lined with parchment paper.
- Place the oil into a saucepan and bring the temperature to 160 degrees. If you don’t have a thermometer, sprinkle some flour on the top and this should float straight away.
- Cook the fritters 4 at the time, on a low and steady temperature to allow for an even cooking. Drain on some kitchen towel before serving.
