Mother’s Day Shatsuka Brunch

Although a shakshuka is perfect for any time of the day and any day of the week, I think it makes the perfect Mother’s Day brunch. It’s effortless, nutritious and makes a delicious meal for two, using ingredients you’re likely to have in your fridge and cupboards.

Ingredients
- 1 Tbsp olive oil
- 1 Small leek finely sliced
- 2 Garlic cloves, finely chopped
- 1 Red pepper, deseeded and diced
- 1 Tsp ground cumin
- 2 Tsp’s paprika
- ¼ Tsp cayenne pepper
- 1 Tin cherry tomatoes
- 1 Tsp harissa spice
- 4 eggs
- Salt and pepper to taste
- 50g Feta cheese, crumbled
- Fresh parsley to garnish (optional)
Method
- Heat the oil in your frying pan and add your leek, garlic and red pepper until softened.
- Add your cumin, paprika and cayenne pepper, stir well and cook until fragrant.
- Add your tinned tomatoes and harissa, simmer until your mixture thickens.
- Using a wooden spoon, make four gaps in your mixture (ensure these are spaced out) crack your eggs into the sauce, cover with a lid and cook until the eggs are just set, or done to your liking – around 7-9 minutes.

Season with salt and pepper, top with your feta and garnish with fresh parsley. Serve with crusty bread.
Top Tip
- This dish can be easily amended to suit the ingredients you have at home. Use your favourite fresh herbs, substitute the spices above to the ones in your cupboard (curry powder works surprisingly well).
